Dried chiles

Mild doesn't mean boring here. Ancho is sweet, guajillo brings berry and green-tea notes, and chipotle morita is smoky with a long simmer in mind. I keep those, red pepper flakes, and chiles that climb all the way to Trinidad Scorpion. Read the heat note before you grab a handful.
