Shawarma is an Arabic version of Turkish çevirme ‘turning’, in reference to the vertical style of rotisserie-cooked meats, which turns around an axis. Similar to the Turkish döner and the Greek gyro, both of which are cooked the same way.

Description

Shawarma is thinly sliced cuts of marinated meat, like beef and lamb, although chicken or turkey could be used, rolled into a large piece of pita or flatbread that has been heated or steamed. While gyros are served with tomatoes, onion, lettuce and tzatziki sauce. Pitas for shawarma can contain hummus, pickles, tahini, pickled fruits, assorted veggies, even fried potatoes.
