Honey gets its natural sweetness from monosaccharides (simple sugars) fructose and glucose and has about the same sweetness as granulated sugar give or take. It has terrific properties for baking and wonderful flavor as a sweetener. Most microorganisms do not grow in honey, so sealed honey does not spoil, even after thousands of years.
