To create rubbed sage, the sage is lightly ground then passed quickly through a coarse sieve. Sage has a fragrant aroma and an astringent but warm flavor. It is a wonderful enhancer for seafood, vegetables, cornbreads, muffins, and savory breads. Rubbed sage has a strong clean scent and rich astringent flavor.
Rubbed sage marries very well with any type of pork. It is a nice salt free rub for pork roast and seasons up a great pork burger. Use sparingly as it is quite strong.
